Birchwood knives are a work of culinary art. Authentic thin Japanese blade made of premium G2 micro-carbide powder steel. Hand-honed uses a traditional Honbazuke method to 9.5 to 12-degree edge. CRYODUR blade is ice hardened to Rockwell 63. Consists of 101 layers of steel resulting int he floral Damascas pattern. D-Shape handle made from prized Japanese Karelian Birch.
